Our small olive grove has been planted to Frantoio, Leccino, Maurino and Pendolino, a typical Tuscan field blend. Though we are not certified organic, we farm according to standard organic practices.

At harvest we perform meticulous triage, hand-sorting each bucket of fruit to remove any discolored or defective olives.

The olives are stone ground and cold pressed. Many excellent cooks have raved about this oil, which we mainly produce for our own use. We have a small amount of oil that we are able to sell.
